Chapter 6 is the one beginners fear. Carbon-to-nitrogen ratios sound like chemistry class. Pezza makes it workable.
Browns, greens, water, air
Browns = carbon (energy for microbes). Greens = nitrogen (building blocks for microbial cells). Water and oxygen matter just as much as the ratio.
Target roughly 25 to 30 parts carbon per 1 part nitrogen for a hot, fast pile. Too much carbon = slow, cool decomposition. Too much nitrogen = ammonia smell and nitrogen loss to the air.
Why ratio matters
Microbes burn carbon for fuel and use nitrogen to grow. They need more carbon than nitrogen, but not so much carbon that nitrogen runs out first.
When nitrogen runs out early, microbes die or recycle nitrogen from their own cells. Decomposition crawls. This often happens above 30:1 initial ratio.
Worse: microbes can pull nitrogen from the surrounding soil (“nitrogen robbing”), starving soil bacteria you wanted to help. Pezza suggests keeping active carbon sources from pushing the working ratio past about 20:1 if you want to protect nearby soil.
Too much nitrogen vents as ammonia. You lose fertility and gain smell.
Speed and safety
Ratios above 30 to 40 slow composting toward a year, often without heat to kill weed seeds or disease. Ratios around 4:5 are even slower.
A hot pile with chopped inputs, occasional fungal inoculant, and regular turning can finish in 1 to 3 months, odorless, with seeds and many pathogens killed. But watch overheating: excess nitrogen can cook off the microbes you need.
A balanced pile should start “cooking” within a week. When it cools, turn it. Check moisture a foot deep. Damp, not soggy.

- Grass clippings: 19:1
- Old manure: 20:1
- Veggie scraps: 25:1
- Straw: 80:1
- Newspaper: 175:1
See the problem? A pile of only newspaper needs a serious green boost.
Don’t panic
Online charts and extension offices help. Small local nurseries often give better first-timer advice than big box staff, Pezza says. You don’t need to calculate every scrap. Learn the ballpark and adjust by smell, heat, and speed.
My take
This chapter is denser than the rest. Read it once, bookmark a C:N chart, then go compost. The nitrogen robbing warning is underrated. People pile mountains of leaves and wonder why nothing grows nearby.
Temperature is your feedback loop. If the pile won’t heat, add greens. If it smells like ammonia, add browns.
